Pumpkin Bars with Maple Cream Cheese Frosting

I love fall. Our town has a wonderful fall pumpkin patch that has artisans and bakers along with the traditional pumpkin patch pumpkins, gourds and scarecrows.  It’s like something out of a movie.  They have face painting for the kids, hay rides, antiques, crafts and pumpkin bars.  All of those things are pretty great, but I’m not going to lie, the pumpkin bars are what bring me in. My family always makes a stop for the pumpkin bars. They’re big and they’re thick with cream cheese frosting and they’re always so delicious.

The other must-do Colorado fall activity is leaf peeping. Have you heard of it?  We’re near the foothills and we can literally see the aspen trees coming over the ridge changing into their fall colors. It’s always fun to pile everyone into the car and hit the road for the annual leaf peeping trip. The elk are active and the air is crisp and clean. It’s a fun family tradition.

Fall is busy with back to school, sports and family activities. It’s hard to stay on top of all of the household chores. When I finally walk into the house after all of the fun activities and being on the road, I want two things; my home to smell fresh and inviting (even if there is a pile of tennis shoes by the front door and laundry in the hampers) and a snack or home cooked meal waiting for us. When you do finally get home and are able to enjoy your family time , try my version of the Pumpkin Patch Pumpkin Bars with Maple Cream Cheese Frosting. If you can’t make a trip to the pumpkin patch, you can bring the pumpkin patch into your kitchen!  If you jump in the car for a little fall excursion, bring some with you!

Pumpkin Bars with Maple Cream Cheese Frosting

Pumpkin Bar Ingredients:

2 cups granulated sugar

4 eggs

1 teaspoon baking soda

2 teaspoons cinnamon

2 cups sifted flour

1 cup oil

2 cups pumpkin puree

1 teaspoon baking powder

1/2 teaspoon salt

Maple Cream Cheese Frosting Ingredients:

8 ounces cream cheese, softened

1 stick of butter, softened

1 teaspoon maple extract

4 cups powdered sugar

 

Instructions:    Preheat oven to 350 degrees.  Mix all Pumpkin Bar ingredients in order given.  Spread onto greased jelly roll pan.

Pumpkin Bar Pan

Bake at 350 degrees for 25 minutes.  Let cool completely. Mix frosting ingredients in order given.  Spread onto cooled bars.  Refrigerate for 15 minutes to allow frosting to set up.  Enjoy!

Ingredients
  • Pumpkin Bar Ingredients:

  1. I do miss living further North in the Fall, seeing the changing leaves and getting that first crisp Fall morning smell. In Texas the leaves just get brittle and fall off, no color change here! lol Those Pumpkin bars looks delicious! Thank you for sharing with us at Merry Monday!
